Abstract To determine the temperature in degrees Celsius at which the enzymatic hydrolysis of starch is most efficient in the presence of ethene gas (C2H4(g)) in order to optimize the process of ripening fruit in the interest of rendering the food industry more economically and environmentally sustainable.
